The Wine
Pouilly-Fumé is one of the Loire's most highly regarded white wines, rivalled only by those of its neighbour, Sancerre. Both focus purely on Sauvignon Blanc for whites, but the limestone, marl clay and flint of Pouilly brings a classic gunflint aroma to its finest wines. As Decanter wrote, “Loire wines are so full of joy and character, and their value solidifies their status as the most accessible fine wines”. Jérôme Pabiot is a fifth-generation winemaker, combining sustainable, modern techniques with the traditions of his forebears. His 2021 bears the classic, smoky gunflint aroma of the finest Pouilly-Fumé, grown on Les Caillottes (pebbles), while fermentation with wild yeast and ageing on its fine lees adds complexity and texture.

In the rush for Sancerre, Pouilly-Fumé is overlooked. It's wines have great citrusy, flinty finesse
