The Wine
It was the meeting of two cultures when cellar master Régis Camus joined forces with one of Japan’s most highly respected breweries to co-found Heavensake. Regis’s background was Champagne – he’s been ‘Winemaker of the Year’ eight times, but he was excited about creating “the smoothest sakes in Japan, floral, light and fruity, evoking a refreshing joie de vivre.” So, he immersed himself in Japan’s ancient traditions. His skill and attention to detail is obvious in the huge haul of awards they’ve garnered since the beginning, as well as praise from critics. Junmai Daiginjo is delicately floral with fresh fruit notes and minerality. Twice winner of ‘Best Sake’, it pairs well with asparagus, caviar and sushi, of course.
