The Wine
Toro Albalá is unique, firstly because since 1922 the bodega has been housed in a former electrical power station. Then, more importantly, it's reckoned to be the world’s best producer of Pedro Ximénez (PX). It has the finest vineyard holdings in Montilla and the oldest stocks, going back to 1910. In 1970 Toro Albalá became the first Montilla producer to sell dessert-styled PX and they are still the world’s only vintage specialist. The bodega owns 45 hectares of vines in Aguilar de la Frontera and Moriles, where PX vines grow on classic, chalk-white soils. The grapes for this PX are dried in the sun and lose 70% moisture, so the wine's flavour is remarkably intense and long. Beautifully balanced, its taste lingers well after swallowing.
