That’s down to Denis Valdenaire’s painstaking approach in both the vineyard and the cellar. He has practised sustainable agriculture for over 20 years, and prunes severely to restrict yields, even in Clos Jus where the vines produce a miserly harvest of concentrated fruit. Grapes are gently pressed and aged for 14 months in casks of varying ages so oak doesn’t dominate. Ideal with duck or wild mushroom risotto.
