The Wine
The steep, high slopes of Saint-Romain used to be part of the Hautes Côtes de Beaune until 1947 when their standout quality ensured them appellation status in their own right. With his 12 hectares of vines – eight Chardonnay, four Pinot Noir – divided among 42 separate parcels, he is regarded as the touchstone for the very finest Saint-Romain. No wonder then that his wines are listed at 21 out of 26 of France’s 3-Star Michelin restaurants. He favours high-altitude vineyards, many over 300 metres above sea level. Les Cinq Climats has poised, ripe white fruits with good citrus freshness and intensity. Open early and decant or cellar. Serve cellar cool and in large-bowled glasses.
