The Spirit
Dingle Distillery was conceived in 2012 when a trio of brewers – Oliver Hughes, Liam LaHart and Peter Mosley – decided to turn their hands to whiskey. A far cry from the three major Irish distilleries, Dingle began in an old sawmill with three small copper stills. Never ones to rest on their laurels, the Dingle team soon wanted to craft a gin that reflected the rugged landscape of the Dingle Peninsula. Alongside classic juniper, the team uses local botanicals like bog myrtle, hawthorn and heather, which are then macerated in spirit for 24 hours, before being placed in a spirit basket in the neck of the still. You’ll appreciate their attention to detail when you pour your first glass. Best served with ice and a freshly cut wedge of orange.
