Have you ever considered why Prosecco is fizzy? The wine becomes bubbly as a result of a second fermentation inside low temperature pressurised tanks. The carbon dioxide produced at this stage dissolves into the wine. Serve well chilled in tall flutes, on its own or with canapés. It also goes very well with fish and chips!
