The Wine
González Byass is the most famous name in sherry – renowned for magnificent bottles like Apóstoles and, of course, this rich, complex Oloroso, Cristina. Started 175 years ago by Manuel Maria González Angel and his British agent Robert Blake Byass, they remain family owned and determined to revive the UK sherry market. They launched their bone dry Tio Pepe in the mid 90s and changed the fortunes of the industry. Today, they boast 850 hectares of vines in the best parts of Jerez and vats of sherry more than a century old. Olorosos are naturally dry, but added to Cristina is a little of the intensely sweet PX – hence the abocado (medium) in the name. Rich with toffee, nuts and raisin notes, this is a sherry to savour with cheese, nuts or pâté.
