The Wine
Nestled in the corner of a 12-hectare plot of well-placed, organic vineyards lies Pago de Tharsys. The owner is Vicente Garcia, considered to be the Godfather of Valencian Cava and one of the top producers of this increasingly exciting fizz. Alegría de Tharsys is a true testament to his winemaking expertise. It's made from pure Chardonnay, with secondary fermentation taking place in bottle (like Champagne) and 14 months ageing on lees to give the fizz a creamier mousse and more complex, biscuity flavours. It's a more expensive method, but Vicente is certain his wine is worth it. Adorned by its pretty label, Alegría de Tharsys has a creamy mousse and bright fruit aromas and flavours. Delicious on its own and great for a celebration.
