The Wine
Dom Pérignon has been Moët et Chandon’s most luxurious cuvée since its inaugural 1921 release. It is only made as a vintage fizz and only when quality is outstanding. 2012 turned out to be a very challenging year due to frost and hail, but the warm, dry weather of late summer to early autumn brought both their Pinot Noir and Chardonnay to exceptional maturity, with perfect levels of ripeness and acidity. Nearly completely Grand Cru grapes, along with Haut Villiers Premier Cru fruit, have proved a very fine combination, all cuvées aged on lees for over 7 years. Wine Advocate described it as "full-bodied, rich and muscular", Suckling as "almost endless". This Champagne is ravishing now, but will age magnificently, gaining further complexity.
